My love of strawberries started when I was a very little girl. First of all they were, and still are, my favorite fruit. However, not only do I love to eat them, but I just think they’re so pretty! When I was little, Dad and Mom would take us to visit my Great-Aunt Judy in Kentucky. Now even though she’s my great-aunt, because of being my grandmother’s youngest sister, she’s my mother’s age. So I always looked to her as more of an aunt.
Well, Aunt Judy had the most beautiful home you’ve ever seen. She had every room decorated with strawberries! Now I don’t mean garish, tacky clutter, it was all beautifully done. As a child, I always felt like I had stepped into a fairy tale.
When I was around six or seven, the Strawberry Shortcake Dolls hit the toy aisle. Needless to say, my bedroom received a complete makeover. My fondest childhood memories were spent in that strawberry infested room!
To this day, all things strawberry hold a special place in my heart. This Easy Strawberry Freezer Jam is my favorite strawberry recipe. I make a lot of different jams and jellies, but this is the one my children ask for over and over again.
Easy AND Only 3 Ingredients
Just in case you’re wondering, this is so easy to do that anyone can make it. It doesn’t require any special equipment or skill. It’s only 3 ingredients and takes about 30 minutes. The hardest part is letting it sit at room temperature for 24 hours before freezing or refrigerating!
Another thing I love about this easy strawberry freezer jam, is that you can use it as a delicious ice cream topping or crepe filling. It’s also fantastic drizzled over cheesecake.

Measure Carefully
The one thing you need to be careful with, are your measurements. Too much or too little sugar or fruit and your jam won’t set properly. When measuring your fruit and sugar, use a dry measure cup. This way you can fill your measuring cup up and then take a butter knife and scrape across the top of the measuring cup to level out your ingredients. In case you’re wondering, a dry measure cup doesn’t have a spout on it. They look like the ones below.
So all you need to have to make your freezer jam is, a couple of pounds of strawberries, four cups of sugar, a box of SUREJELL and freezer safe containers. Wash your strawberries and cut off the stems and cut into quarters. Next measure out about 4 cups of cut strawberries and put in a large mixing bowl. Crush your strawberries using a handheld potato masher. You can also crush them by hand or pulse them in a food processor. If you use a food processor, try not to over pulse them. Strawberry freezer jam is better with chunks of strawberry in it.
Next, measure out two cups of crushed strawberries and four cups of sugar. Mix it well and allow it to sit for 10 minutes, stirring occasionally to help dissolve the sugar. Now put one box of SUREJELL and 3/4 c. of water into a small saucepan and bring to a boil, mixing well. Allow it to boil for exactly one minute. Mix the heated SUREJELL into your crushed strawberries and sugar, stirring for exactly three minutes. Ladle your strawberry freezer jam into freezer safe containers, leaving 1/2″ of headspace to allow for expansion when freezing. Allow your strawberry freezer jam to sit at room temperature for 24 hours before freezing. Your delicious freezer jam will keep for up to three weeks in the refrigerator and one year in the freezer.
Tips
The one big tip I can offer is to use a kitchen timer when allowing the berries to sit in the sugar, boiling the SUREJELL and stirring the SUREJELL into your fruit mixture. Timing and accurate measurements are the most important part of making any type of jam or jelly.
You also don’t have to go out and buy a lot of special freezer containers. I’ve recycled a lot of small plastic butter containers and they work perfectly. So while it’s fun to have pretty, new containers, it’s certainly not necessary. It’s totally up to you.
Another thing you need to be aware of; if you are using a glass top stove, be sure not to get any of the hot SUREJELL on your cooktop. It will damage it. If you’re careful you won’t have a problem. I just wanted you to know, so in case of a spill you can turn off the burner and wipe/scrape it up quickly.
Be sure not to use anything but granulated white sugar. Sugar alternatives and artificial sweetener will not work in this recipe.

Ingredients
- 4 cups of strawberries: washed, de-stemmed and quartered
- 4 cups of granulated sugar
- 1 Box of SUREJELL Fruit Pectin
- 3/4 cup of water
Instructions
- Crush strawberries using a handheld potato masher.
- Measure out EXACTLY two cups of the crushed strawberries and pour into a mixing bowl
- Add four cups of granulated sugar to the mixing bowl and stir well.
- Allow the strawberries and sugar to sit at room temperature for 10 minutes, stirring occasionally
- Now put one box of SUREJELL fruit pectin in a saucepan with 3/4 cup of water. Bring to a boil stirring constantly.
- Allow the SUREJELL to boil for EXACTLY one minute.
- Remove from the heat and mix into the strawberry and sugar mixture, stirring constantly for 3 minutes. Nearly all of your sugar granules should be dissolved.
- Ladle your strawberry freezer jam into freezer safe containers, leaving 1/2″ of headspace to allow for expansion when freezing.
- Your strawberry freezer jam will keep in the refrigerator for up to three weeks and will keep up to one year in the freezer.
