Cauliflower Bisque is the perfect warming soup for a chilly fall day or winter weather. It’s a thick, delicious soup that warms you up and goes together quickly, with little prep.

When I originally wrote this post, we had woken up to a cold snowy Sunday, and my children were none too happy about our weather. It was March after all, so they were past ready for spring. This Cauliflower Bisque is one of our family favorite recipes, so I knew it would help make the cold a little easier to tolerate.
Meal Prep with The Forecast
I often base my weekly recipes on the forecast. Grilled meat and salad during warmer, sunny days, and soups, stews or crock pot meals for cold or rainy days. There’s just something about walking into your home on a cold or rainy day, and the house is filled with the smell of the crock pot bubbling, or soup simmering on the stove. I often pair my soups, stews or bisque with some type of warm bread or rolls. (Homemade or store-bought, depending on the time I have.)

Reminiscent of A Childhood Favorite
When I was a little girl, Campbell’s Cream of Potato was my absolute favorite soup in the whole world! I was really excited that this bisque has a similar flavor, and the cauliflower boosts the health factor.
Fresh or Frozen Cauli, It’s Up To You
This bisque is perfect for cold weather, because it has just enough spice to warm you up inside! If you enjoy spicy foods, you can always increase the red pepper to your preference. I’m personally a bit on the wimpy side when it comes to spicy foods, so if that describes you, then the recipe amount should be perfect! You can use frozen or fresh cauliflower, either works really well. Frozen is definitely quicker, but I typically use whichever I have on hand.
My Little Secret Weapon
This soup is pureed, so you can use a regular counter top blender or an immersion blender. I highly recommend investing in an immersion blender for hot ingredients if you enjoy pureed soups. I’ve had more than one burn, because I filled my counter top blender a bit too full and the steam caused the top to pop off. Ouch! My husband noticed my problem and surprised me with a wonderful Kitchen Aid immersion blender from Amazon. I LOVE IT! It’s soooo much easier, and a lot less messy to use. I confess, it’s one of my favorite kitchen tools.
I couldn’t find the exact same immersion blender set that I have, but this one is highly rated, with a good price.
If you are using a blender, just please be careful not to put more than a cup, to a cup and a half per batch. I also recommend letting your soup cool slightly before blending. This will help keep you from getting burned like I did!
Tips For Making Cauliflower Bisque
Because of the soup being a smooth, slightly thick bisque, my husband prefers to drink his out of a mug. It’s also great topped with shredded sharp cheddar, chopped green onions and parsley! It’s an easy meal, because you can put the cauliflower, potatoes, onions, broth and red pepper flakes in the crock pot, then, if you are going to be gone, you only have to add the remaining ingredients when you get home, blend it, and it’s ready to serve.
I love simplicity, especially on busy days! If you need to leave the house early, you can use frozen cauliflower, so you can just toss it in with no prep in the morning, dice the potatoes and onions the night before, and cover them with water. (Just make sure they’re covered well with water, or they’ll start to brown.) Turn the crock pot on, and done. If you need a new crock pot, check out these on Amazon. Ingredients
- 2 lbs. of Frozen Cauliflower Florets or 2 Heads of Fresh Cauliflower
- 2 lbs. of Potatoes, (about six regular size potatoes) Peeled and Cubed.
- 7 cups of Chicken Bone Broth
- 2 cups of Diced Onion
- 1 tsp. Dried Thyme
- 1/2 tsp. Garlic Powder
- 1/4 tsp. Red Pepper Flakes
- 2 cups of Evaporated Milk
- 4 Tbs. Butter
- 1 tsp. Salt
- 1/2 tsp. Black Pepper
- Shredded Sharp Cheddar Cheese (Optional)
- Chopped Green Onion (Optional)
- Dried Chopped Parsley (Optional)
Instructions
- Combine cauliflower, potatoes, onion, broth, thyme, garlic powder and red pepper flakes in a 7 qt. crock pot.
- Cover and cook on low for 8 hours, or high for 4 hours.
- When bisque is done, use an immersion blender to process until smooth.
- If using a traditional counter top blender, puree small batches and return to crock pot.
- Add milk, butter, salt and black pepper.
- Stir until blended.
- Top individual servings with cheese, parsley and green onions, if desired.
