This Turkey Mushroom Bake is one of my go-to favorites for turkey leftovers. I have a large family, and most of them love turkey. This year, our turkey was completely gone after Thanksgiving dinner. So, my husband requested that I make another one a few days later.

My husband absolutely loves to have leftover turkey. He has a special sandwich that he enjoys making with it. We also love to make turkey salad and of course, this Turkey Mushroom Bake.

Super Easy for Busy Days

This recipe is not only delicious, but it goes together super fast. One thing you’ll learn about me; I love to cook, but I don’t like fiddly recipes. That’s not to say I don’t put in extra effort for a really good dish, but as a general rule, I like to keep things pretty straight forward.

I have a lot of things to juggle, including being a wife, mother, cook, housekeeper, business owner and caring for an aging relative. I have a feeling many of you feel the same way, so I keep it quick and easy as often as possible. After all, you shouldn’t have to spend hectic hours in the kitchen every day just to put a delicious meal on the table.

    Tips to Decrease Baking Time

    While you can whip this dish up in minutes, it does take about 45 minutes to bake. If you want to cut down on that baking time, substitute the white rice for the same amount of Minute Rice. Your recipe will be done in 30 minutes. Alternatively, you could pre-cook your white rice, draining well. Then, mix all of the ingredients together, except for the milk. Next slowly add in enough milk to make your Turkey Mushroom Bake have a creamy consistency. You will probably only need 1/2 – 1 cup of milk. Bake for 30 minutes.

    Can I Freeze This Turkey Mushroom Bake?

    Yes, but you’ll need to follow a few tips. When freezing recipes that contain cream or cream based soups, you need to do it slowly. If not, the cream will separate and give your dish a grainy texture when thawed and baked.

    How To Freeze Turkey Mushroom Bake?

    Here’s how to avoid that. First of all, mix everything together, except for the golden fried onion topping. Pour into your prepared 9×13 pan. Do not bake and put in the refrigerator for 2 hours or overnight to completely chill. Remove the casserole from the refrigerator, cover well and freeze immediately. It can be kept frozen for up to 3 months. Before baking, thaw completely and top with golden fried onions. Bake as directed.

    A casserole can be a full meal in itself. It really just depends on your family’s preference. Having four children, I typically served casseroles with either salad and rolls, or salad and baked sweet or white potatoes. If it’s just my husband and I, I’ll steam a green vegetable and serve it alongside either cornbread or dinner rolls.

    This recipe falls under my definition of comfort food and makes a perfect cozy winter meal. It’s great for snow days, busy days and all of the days in between.
