Homemade broccoli casserole is an excellent side dish. I love it because it’s easy enough to toss together for a mid-week meal, but it also gets rave reviews for a company meal or potluck dinner. I’ve had a lot of requests for this recipe, so I wanted to share it with you. It will quickly become a favorite.

My Mealtime Struggles

Mealtime at our house has become a real challenge. First of all, my husband and children have varying schedules. Because of this, I have to plan meals that can be reheated well. Another issue I have, is that no matter what I make, someone doesn’t like it. It literally drives me up the wall! My daughters won’t touch pork. My son won’t eat anything with red sauce, and my husband is trying to watch his cholesterol, so that knocks out most starches and a whole list of other foods. Add into that the fact that I also cook some separate meals for myself due to being on Keto for my health, and mealtime becomes a complete nightmare! We have actually had family meetings to try and come up with meals that the entire family is happy with. Guess what? Unless I make Chinese or Mexican, someone is going to be upset.

Broccoli Casserole for The Win!

Thankfully, this broccoli casserole has proven to be an exception. It’s one of only a few recipes that the whole family loves and looks forward to. The cracker topping really compliments the casserole. I also love that I can re-heat it in the oven, and it’s just as good as if I had just made it.

Another thing I love about this casserole is that I can make it ahead of time if I know I’m going to be busy. I can prepare the casserole and pop it in the refrigerator until I need it. (Up to 2 days in advance.) I just wait to add the Ritz topping right before baking.

I have served this with beef, pork or chicken. It compliments all three really well. It’s also a good way to sneak vegetables to your veggie hating children and grandchildren. My three year old grandson absolutely loves it!
