  2. I can’t stress enough about how important it is to keep moisture out of your chocolate. The last thing you want when you’re dipping strawberries is to waste an entire pot of chocolate because it seized. Wash your strawberries several hours before dipping and pat them dry. Then, allow them to air dry before dipping. This will ensure that they turn out perfectly.
  3. No matter how high quality my chocolate, I always add in either a little shortening or food grade paraffin wax. If you add it to your pot and melt it before adding the chocolate, the chocolate will always melt much smoother. I know people who never do this and seem to have no issues, but I’ve had much better success when I add in this step.
  4. Have patience when melting your chocolate. Chocolate burns really easily, so add in your shortening or wax, (two or three tablespoons will be plenty) then melt it on medium low. Once your paraffin wax or shortening has completely melted, add in your chocolate. Gently stir it very frequently until it’s melted, then turn the heat to low. A lot of times, once the chocolate has melted smooth, I’ll turn the heat completely off and dip as much as I can, then when I can tell the chocolate has started to cool a bit, I’ll turn it back on low to warm it up.
  5. If you are using a block or bar of chocolate, chop it up to make smaller pieces. This helps the chocolate melt quickly and more evenly.
