First of all, it comes together pretty quickly, especially if you use a food processor to crush the crackers, corn flakes, and chop the pepper and onion. I also use the food processor to shred my cheese if it’s not pre-shredded. Secondly, I usually double or triple the recipe because it freezes well for a quick meal solution on a busy night.
Quicker Than Traditional Meatloaf
When I was growing up, my Mom made fantastic traditional meatloaf, but it used to feel like it took forever to bake. By making this miniature pepper jack meatloaf recipe into mini loaves, you can have it on the table in around 35 minutes.
I created this recipe years ago by combining a couple of different recipes that my husband and I really liked. It became a hit, and my family request it often.

Meatloaf Fan Club??
I remember one particularly embarrassing incident when my children were really small. We were at a potluck dinner, and one of the dishes was meatloaf. Not thinking anything about it, I put some on my two younger children’s plates. To my horror, one of my children took a bite of their meatloaf, and loudly proclaimed that it was disgusting and they were never having meatloaf again unless it was Mommy’s! 🫣 (Having a fan base isn’t always everything it’s cracked up to be!)
I strongly recommend lining your baking sheet with foil. It makes clean up soooooo much easier. Also, be sure that you are using a baking sheet with at least 1/2″ sides, to keep grease from dripping in your oven.
Silicone Baking Products from Amazon
I have only recently started using silicone baking products. I have to say that I’m really loving them. I’ve not yet purchased silicone baking mats, but they are high on my wish list. These will be a fantastic alternative to foil or parchment paper for your miniature pepper jack meatloaves. So far, I haven’t had anything stick to my silicone bake ware. Barbecue Sauce or Ketchup?
I like to make a sweet homemade barbecue sauce for my miniature pepper jack meatloaves. You can use store bought or traditional ketchup if you prefer. I recommend at least giving my homemade sweet barbecue sauce a try.
Homemade Sweet Barbecue Sauce
- 2 c. Dark Brown Sugar
- 1 c. Ketchup
- 1 T. Prepared Mustard
- 1/4 c. Honey
Combine all ingredients in a small mixing bowl and stir until blended, and the sugar is melted. Brush the sauce on meat loaf during the last fifteen minutes of baking. Serve extra sauce on the side.
You can adjust the ingredients for the barbecue sauce to your liking. Sometimes I use less brown sugar an more honey. You may prefer more mustard. Taste of your barbecue sauce and adjust the ingredients to your liking. Enjoy!
Ingredients
- 3 lbs. Ground Beef
- 1 c. Saltine Crackers – crushed (about 1 sleeve of crackers)
- 1 c. Corn Flakes – crushed
- 1 Egg
- 1 med. Onion – diced
- 1/2 Green or red bell pepper – diced
- 8 oz. Pepper Jack cheese – shredded
- 8 oz. Sharp cheddar cheese – shredded
- Salt & pepper to taste
- Homemade Sweet Barbecue Sauce -* Recipe above*
Instructions
- Preheat oven to 350
- Place all ingredients in a large bowl.
- Mix well and shape into palm sized, oval loaves.
- Place on a baking sheet lined with a silicone baking sheet, foil or parchment paper.
- Bake @ 350 for 30-35 minutes, or until center is no longer pink.
- Using a silicone basting brush, top each loaf with barbecue sauce during the last fifteen minutes of baking.
